Cheshire is one of the oldest recorded English cheeses with a mention in the Domesday Book. Lucy and Lance Appleby began making their cheese in 1952 using milk from their own herd of Friesian cows. Today it is their grandson Paul and his family who continue the business.
The mineral flavour of Appleby's Cheshire arises from unusually high salt levels in the farm's milk. Rich salt deposits are found in the soil of the grassland pastures on which their cows graze.
Appleby's Cheshire pairs well with acidic fruit such as apples and strawberries; also sweet figs and dates. It is perfectly complemented by a glass of crisp sparkling cider.
