Choosing the perfect cheese for your wedding cheese stack is a tricky job as there are so many fabulous options out there. Here we have compiled a list of things to think about before making your final selection.
Do ... think about which cheeses you love. What are your favourite cheeses? Do you have cheeses that are important to your relationship - perhaps those made in significant places such as where you met, first went on holiday or got engaged? Are there cheeses made locally to your wedding venue that guests visiting the area would be excited to discover?
Do ... offer guests a balanced selection. Your choice of cheeses should give thought to the cheese selection that will be enjoyed by guests once the stack has been disassembled. It should offer them a balanced cheese board in terms of milk type and style of cheese. We like to incorporate hard, soft, blue and goat's cheeses to ensure there is something to tickle everyone's taste buds.
Do ... cater for dietary requirements. You should consider the dietary requirements of your guests offering pasteurised options for those unable to eat raw milk cheeses, and some cheeses made with vegetarian rennet.
Do ... include the right quantity of cheese. A frequent question is how much cheese should be included in a cheese 'cake'. We recommend 70g to 100g of cheese per person depending on what other food will be served during the celebrations and also your available budget. We aim to spread this total weight across the individual cheeses selected.
Do ... create a stunning and stable stack. Your cheese choices should wow your guests when displayed as a magnificent tower of cheese! We usually incorporate about five to eight layers of cheese and create a tiered tower with whole cheeses of decreasing diameter. It is lovely to choose cheeses with varied but toning rinds to create unique display making the most of the natural beauty of cheese. Soft cheeses can be tricky to include in a tower as they become unstable as they warm up to room temperature, but these can be presented in the wooden boxes in which they are delivered.
