There are no mountains to be found near Copys Green Farm, Wighton, but this doesn't stop Catherine Temple producing Norfolk's very own Alpine-style cheese. Inspired by the local cheeses she discovered on a European cycling holiday, this semi-hard cheese is handmade to a Gruyere recipe using milk from the farm's own herd of Brown Swiss cows. Ordered cheese as a gift… It arrived on the date advertised and I was given an indication what time DHL would deliver it. The recipient called to say thanks and commented how well the cheese was wrapped.
After the superbly sumptuous success of a first order in mid-June 2020, a second summer selection ensued in August pending a stay in Aldeburgh. The varied mix was: Colston Bassett Stilton (a delectable delight of a great blue cheese); Extra Mature Gouda (aged for 1,000 days, its striking deep orange colour complements 'a delcious nutty caramel flavour and long finish'); Snowdonia Black Bomber (a repeat order: a round cheddar with a true tang in its eye-catching black wax case); St Jude (soft and creamy in an attractive little wooden box); and Well's Alpine (it was the website recomendation of this cheese which compelled me to place the order: a semi-hard cheese with 'a sweet, nutty flavour and a pleasant tang'). The promise of what each cheese would do for the palate was perfectly peformed. The service from packaging to promptness was personal and professional. There is only one disappointment: the cheese has now all gone.... Thank you so much.
