What's special about Godminster Black Truffle Cheddar?Godminster Farm, near Bruton in Somerset, is home to the 320 strong herd of dairy cows whose rich and creamy milk is used to produce Godminster Vintage Organic Cheddar. The farm, covering 1,300 acres, was acquired by Richard Hollingbery in the early 1990s and was certified as organic by the Soil Association in 1999. An environmentally friendly and ethical approach to farming both land and livestock remains at the heart of activities on the farm today. Over the last thirty years, 25,000 broadleaf trees have been planted and fifteen ponds created to cleanse ground water.
Godminster Vintage Organic Cheddar was first made in 1999 to a traditional ninety-year-old recipe. It is matured for up to twelve months and encased in distinctive burgundy wax that is instantly recognisable in our Slate 'wall of cheese'. Seasonal variations are produced in the shape of Christmas stars and Valentine's hearts. It is a soft, smooth Cheddar sprinkled with naturally occurring lactate crystals. With a creamy texture, its initially mellow flavour develops depth and richness in the mouth, leaving a lingering fulsome flavour.
Black Truffle Cheddar is the most recent addition to the Godminster range. It was launched just three months ago in September 2019.
